- Leading and fully supervising kitchen operations, preparing menus, ensuring high quality in preparation and presentation, controlling operating costs, and achieving the highest levels of customer satisfaction and food quality.

Detailed tasks and responsibilities:
First: Management and supervision of the kitchen
- Supervising all daily kitchen operations
- Managing a team of chefs, cooks, and their assistants and distributing tasks
- Training workers on quality standards, modern cooking methods, and food safety
- Monitoring the quality of dishes and ensuring their compliance with approved standards
Second: Preparing lists and innovation
- Preparing main and seasonal menus
- Developing new varieties that suit the type of restaurant and the target audience
- Determine standard ingredients and preparation quantities (Recipe Standardization)
- Creating distinctive presentation methods (Food Presentation)
Third: Cost and inventory management
- Determine the cost of each food item and the profitability of each dish
- Controlling waste and controlling expenses related to raw materials
- Review daily and weekly inventory quantities
- Coordination with the purchasing department to determine kitchen needs
Fourth: Quality, health and food safety standards
- Implementing HACCP food safety requirements
- Monitor the general cleanliness of the kitchen and equipment
- Ensure safe storage, expiration dates, and temperatures
- Managing health reports and dealing with regulatory authorities’ rounds
Fifth: Administrative coordination and reports
- Providing periodic reports to management on performance, costs, and needs
- Follow up on customer complaints and modify procedures to improve quality
- Work with operational management to control and develop workflow
- Prepare work schedules and shifts for kitchen staff
Requirements:
  • Experience from 8 - 15 years
  • High skill in cooking various cuisines (Eastern/Western)
  • Strong experience in food cost control
  • Experience in menu preparation, recipe development and food safety
